I have a dirty little perl script to do this:

  http://mavis.anu.edu.au/scripts/volflip

Use it like this:

   $ volflip -z <in.mnc> <out.mnc>

Be careful when doing things like this that you don't mess with any
direction cosines in your volume. volflip will most certainly not do
what you expect if you wish to retain this information.
